ADOBONG ATAY NG MANOK | CHILLI LIVER CHICKEN

Every time I visit an Asian Shop, chicken liver is one of the favourite meat option to buy. I guess it's because we only seldom cook it, as it is not readily available to our local shop. We need to travel a bit of a distance before we can buy it. Chicken liver is very popular to the Filipinos. Its soft and creamy texture and a little of spiciness makes your mouth watering. 

Liver is indeed a superhero, and while chicken livers aren’t nearly as strong flavored as beef or turkey liver, they certainly pack a punch. Chicken livers are loaded with B12, B6, folate, iron and vitamin A, making them the ideal food to combat anemia and improve red blood cell formation. In traditional cultures the organ meats were revered for their nutrients and it was often the first solid (super)food fed to babies, it was also an important food for pregnant mothers and the elderly. As long as you are eating organ meats from pasture-raised animals, grown without hormones or antibiotics, you are doing your body good.*

Now let's cook this superfood and enjoy the tasty goodness it gives. 

Ingredients:

  • 1 medium onion  -  cut cross wise
  • 1 green chilli pepper -  cut julienned
  • 2 medium tomatoes -  cut cross wise and seeds removed
  • 700 gms chicken liver 
  • 1 tsp ginger powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp fish sauce or soy sauce
  • 1 tsp chilli powder
  • 1 tsp turmeric powder
  • 1tsp coriander powder
  • 2 stalk of spring onion  cut 1 cm long
  • 2 tbsp olive for saute + 1tbsp as a finish 

Instructions:
  1. Saute onion and gree chilli pepper. Wait till the onion become transluscent.
  2. Add the tomatoes. Saute until the soft. Remove the skin as necessary. Skin contains substances that could irritate the stomach lining. 
  3. Put the washed chicken liver. Cover. Stir occasionally until light brown. 
  4. Once it turned light brown, you can now add the garlic powder, ginger powder and salt. Mix well.
  5. Simmer for few minutes, then you can add the fish sauce. Stir.
  6. After that, add the chilli powder, turmeric powder and the coriander powder. Keep mixing until well incorporated. 
  7. Let the sauce thickened in a low fire. And add the spring onion. Mix.
  8. Simmer for few minutes, check the taste and adjust accordingly. Next, add the olive oil to add creamines . 
  9. Once cook, transfer to serving bowl and ENJOY!
