BANANA ALMOND BREAD FOR A HEALTHY SNACK

Sometimes we buy bananas thinking that we will able to consume it straight away, but for some reason few left and over ripen. And we thought that it is no longer useful and ended up to our bins. 

But do  you know that over ripped bananas are rich in anti-oxidants?

Although over ripe bananas may not really look very appetising--the fruit turns soggy while the banana peel may turn black or brown--they are very good for our health. An overripe banana is rich in antioxidants, which, according to livestrong.com, is beneficial in preventing or delaying cell damage in one's body. This, in turn, lowers the risk of diseases. It also improves our immune system.

As a banana ripens, the starchy carbohydrates in them convert into free sugars, thus making these bananas easy to digest, according to dailysuperfoodlove.com. Green bananas, on the other hand, contain starches that are hard to digest.

When a banana becomes too ripe, its peel turns a few shades darker. The dark spots on the peel create Tumor Necrosis Factor (TNF), a substance that can kill cancerous and abnormal cells, mentions healthy-holistic-living.com, in one of its articles.

INGREDIENTS:

  • 1 cup almond milk
  • 1 big banana or 2 small bananas
  • 1/2 tsp baking powder
  • 1 tsp stevia 
  • 1/2 tsp vanilla extract
  • 1 egg
Note: If you want to bake a bigger quantity just double the measurements

INSTRUCTIONS:
  1. Pre-heat oven at 170 degrees Celsius.
  2. Mash the banana in a plate and set aside.
  3. In a bowl, mix the almond flour, mashed banana, baking powder, stevia, vanilla extract and egg. Mix well.                                                                                       
  4. You can either grease the baking tin or line it wax paper. 
  5. Bake for 25 - 30 mins ( please note every oven is different to it might varies, so just keep an eye and check regularly )
  6. Once you noticed the outside is turning light brown, check the inside by poking a toothpick. If something is sticking on the stick it means it needed more time of baking. I would suggest to lower down the heat setting or place a foil on top of the bread to prevent burning.
  7. When cook, let it cool down before serving.
