I was looking for a chicken thigh recipe and I want  it a bit different from the previous recipe I had already cooked. Luckily, I stumbled with this one and it turned out fantastic. My kids really loved it. It has the right amount of spiciness that kids can tolerate, and the savory sweet flavor really gives an  awesome taste! It will make you keep coming back for more.   • 600 gms chicken thigh
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp ginger paste
  • 1 tbsp chilli paste
  • 2 tbsp brown sugar
  • 1 tsp cinnamon powder
  • 1 medium onion -  minced
  • 2 tbsp corn starch
  • 1/2 tsp of salt
  • 1/2 tsp of black ground pepper
  • 3 gloves garlic - minced
  • Baking pan
  • Wax paper / grease paper - for lining
  • Tong

  1. In a bowl, mix the chicken thigh with all the ingredients listed above. Mix it thoroughly. Set aside to marinate for at least 2 hours, to absorb fully the marinade into the meat.
  2. After to hours, prepare the baking pan lined with wax paper /  grease paper. If you prefer no lining it's ok, however, if in case you need to line your pan, I would recommend to use wax paper or grease paper that foil, because I have read before that foil contains aluminum that when heated it has a chemical reaction which is not good for our health, that is why I am trying to avoid using it if possible. 
  3. Then pour the marinated thigh chicken into the lined pan. Spread the chicken apart into a single layer if possible, in order to evenly distribute the heat into the meat. 
  4. Leave in the fan oven at 200 c for 30 mins. Please note that you have to check it from time to time to ensure that the upper part is not burning and in between you have to turn it to the other side. Also, please note that oven heat may differ from one oven to another, ensure that the heat just  right to cook the meat. 
  5. Once, the sauce has thicken and the chicken turned to golden reddish brown, you can remove it from the oven. 
  6. Transfer the chicken thigh to the serving plate and pour the sauce over. And now you can enjoy the super duper yummy sweet chilli chicken thigh. Have it with the steamy rice, and it's awesome!
