CHICKEN SOPAS | CHICKEN MACARONI / PASTA SOUP

This recipe is perfect to keep you warm in a cold weather. Chicken sopas is the ultimate comfort food! This soup are made with chicken, macaroni, vegetables, and flavorful broth. This Filipino-style soup is absolutely delicious and creamy. 

Although, it is good to serve in a cold weather, it is also enjoyed even in an ordinary days. Usually, Filipino loved to have it as an afternoon snack. 

This recipe is made easy for you and as natural as possible. No need to use any artificial flavorings. I'm sure you will love it!

INGREDIENTS:

  • 1/2 kgs chicken thigh - cut small elongated
  • 1 medium onion -  minced
  • 2 gloves of garlic-  minced
  • 2 stalks of celery - minced
  • 1 tsp of salt + few pinch
  • 1/4 tsp pepper
  • 2 tbsp fish sauce
  • 1 L boiling water or more
  • 1 - 1 1/2 cup macaroni elbow
  • 1 - 2 medium carrots
  • 1/4 - 1/2 cabbage
  • 3/4 cup of fresh milk or evaporated milk

INSTRUCTIONS:
  1. In a medium heated pan, saute garlic and onion. Wait till the onion turned transparent. 
  2. Then put the chicken. Saute and cover till the juice comes out. 
  3. When chicken turned light brown, add seasonings ( salt, pepper and fish sauce ).
  4. Mix well and let it simmer till the juice lessened down.
  5. When the sauce dried out, add the mince celery. Cook it for 5 minutes.
  6. Then, add the boiling water. At the same time, put the macaroni. Let it simmer for 15 - 20 mins.


  7. If it dried out, you can add more water. 
  8. When the macaroni is nearly cook, add the carrots. Simmer for 5 minutes.
  9. Next, add the cabbage and wait until it is cook.
  10. Lastly, check the taste and adjust according to your preference. 
  11. Once, everything is done, remove from heat. 
  12. Transfer to a serving bowl. 
  13. And enjoy your creamy chicken sopas!
