OIL FREE MONGGO WITH PORK RIBS

Monggo (Mung Beans)  recipe is one of the known bean recipe in the Philippines. There are many ways how to cook it. Some would saute the meat first then incorporate it with the boiled mung beans. Also, some would use belly or shoulder meat of pork, however, in this recipe we will not use oil for our meat and we will use the pork ribs instead, which is also a delicious part of the pork when softened by cooking for longer period of time. INGREDIENTS:

  • 200 ml mung beans
  • 500 - 600 gms pork ribs
  • medium size ginger  - cut thinly
  • 1 large onion - whole
  • 2 large tomatoes - remove seeds and cut half
  • 1 litre water or more
  • 2 tbsp fish sauce + for adjustment
  • 1/2 tsp salt + for adjustment
  • 2 -3 medium egg plants
  • 1 - 2 cups spinach

INSTRUCTIONS:

  1. In a pot, wash the mung beans for few times until the water is clear.
  2. Then add water, cover  and boil in a high heat setting.
  3. In another pot, boil the pork ribs to remove the impurities.
  4. While waiting, chop the ginger into thin layer.
  5. Cut the tomatoes into half and remove the seeds.
  6. And will use a whole onion - just cut both ends and remove the skin.
  7. Add these to the mung beans once it is boiling.
  8. Check your pork ribs at this time, separate if it is sticking to each other.
  9. Check your mung beans and stir occasionally.
  10. Once the pork ribs have boiled for 5 mins remove from heat and rinse it with cold water and  remove the scum, then set aside.
  11. Now add more water in the mung beans once it dried out.
  12. Once it is boiling add the pork ribs.
  13. Then season it with fish sauce and salt.
  14. Simmer in a low fire for about 30 to 45 mins to soften the meat.
  15. Don't forget to stir in between to prevent sticking on the bottom of the pot.
  16. When the meat  is almost cook test the flavor and adjust seasoning depending on your preference.
  17. Prepare and cut the eggplant place it in a bowl of water to prevent black discoloration.
  18. And wash the spinach. Set aside.
  19. Ensure the pork ribs are soft enough.
  20. Then you can put the eggplant, wait until it is cook then you can add the spinach.
  21. Simmer for 2 - 3 mins  avoid over cooking. Be mindful that spinach is quick to cook.
  22. Lastly you can transfer it to the serving bowl.
  23. And enjoy eating your monggo with soft and yummy pork ribs!
