BANANA BLUEBERRY MUFFINS | LOW CALORIE HIGH PROTEIN RECIPES

It is a delicious , gluten-free muffins made with coconut flour and sweetened with bananas... try it and tell us your thoughts about it. We are happy to hear from you.

INGREDIENTS:
  • 2 large banana
  • 2 eggs
  • 1/4 cup almond butter
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut flour
  • 1/4 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 pinch sea salt
  • 3/4 cup blueberries frozen


INSTRUCTIONS:
  1. Pre-heat oven to 175 Celsius. 
  2. Mash banana in plate.
  3. In a large bowl, mix the mashed banana, eggs, almond butter, melted coconut oil, and vanilla extract. Whisk (or use mixer to mix) until fully combined.
  4. Add coconut flour, cinnamon, baking soda, baking powder, and sea salt. Mix thoroughly.
  5. Fold in blue berries.
  6. Line cupcake liners in the tin.
  7. Divide batter among lined muffin cups. 
  8. Bake for 23 - 25 mins, until a toothpick inserted in the center of a muffin comes out clean.
  9. Remove from oven, and let sit in muffin tin for about 10 minutes before transferring to a plate or container.
  10. The muffin is ready to serve, ENJOY!
  11. Can be stored in the refrigerator in an airtight container.
