LUPIANG TOGUE OR MUNG SPROUT SPRING ROLL

One day I have decided to try and experiment how to grow a mung sprouts. It took 4 - 5 days to grow before harvesting and ready for cooking. Growing mung sprouts needs a technique on how to do it, otherwise, you got the tendency to fail like what I did before. So make sure you do your research before doing so. I was thinking it would be nice to make it a lumpiang togue and so I did.

Lumpiang togue is one of variation of lumpia or spring roll and its major ingredients is togue or what we call mung sprouts, mix with other vegetable such as carrot, green beans, celery etc. It is a popular appetizer or snack in the Philippines and best served with  spicy vinegar with onion, garlic and crushed whole peppercorn.

With this recipe I made it with mince pork, but for vegetarians you can use tofu instead of meat. After making and cooking this recipe, I have shared it to my in-laws and they liked it, even my niece keep coming back for it. And now I am sharing it with you to enjoy this mouth watering snack and appetizer.

INGREDIENTS:
  • 300 - 400 gms togue or mung bean sprouts
  • 500 gms minced pork or tofu
  • 3 cloves garlic - minced
  • 1 medium sized onion - minced
  • 1 medium sized carrot - julienned
  • 200 gms green beans - slanted cut
  • 200 gms celery - slanted cut
  • 2 tbsp fish sauce
  • 1/2 tsp salt
  • 1/2 tsp black ground pepper
  • 1/2 tsp garlic salt powder (optional)
  • 2 - 3 cups oil
  • spring roll wrapping paper
  • 100 ml water


INSTRUCTIONS:
  1. Heat the pan in a medium fire and add 2 tablespoon of cooking oil.
  2. When the oil is hot enough, starts to saute the garlic and onion.
  3. Once the onion turned transparent, add the pork meat. Stir according till it turned to light brown.
  4. Now add the fish sauce, garlic salt powder (optional), salt and ground pepper. ( Tips: You can add in small amount initially and check if the taste suits you and add more later if it is needed.)
  5. Blend it well with the pork and simmer for few minutes and stir occasionally until it dried up and turned to golden brown.
  6. At this stage, add the water, simmer for 2 minutes and followed by the vegetable (carrots, green beans and celery) and simmer again for 2 - 3 minutes .Make sure the veges will not get overcooked so checking it from time to time is recommended.
  7. Once veges are half cook, add the togue. Mix well and cover it to simmer it again for 2 - 3 minutes.
  8. Lastly, check the taste and if needs more seasoning, you can add and adjust it according to your preference.
  9. Finally when the togue is firmly cook, remove it from fire and set it aside with lid open to cool down.
  10.  When veges have cool down, wrap the cooked vegetable with the spring roll wrapper. (see video on how to do it.)


  11. Now time to fry the lumpia. Pour the remaining oil in the pan or pot and wait till it is hot enough.
  12. Deep fry the wrapped lumpia till it turned to golden brown. If your oil is not enough for deep frying, make sure you turn your lumpia on all side when it turned to golden brown to prevent it from burning.
  13. Once cook, take it out from pot or pan and place it in a plate lined with paper towel to remove excess oil.
  14. Transfer to a serving plate.
  15. Served it with vinegar mixed with chili, onion or garlic and crushed pepper corn.
