SPINACH OMELETTE WITH TOMATOE SIDINGS

INGREDIENTS:
1 cup of organic spinach ( washed )
1 or 2 big organic tomatoe
2 medium free range or organic eggs
1 tbsp virgin coconut oil
pinch of sea or rock salt ( avoid processed salt as they contain other chemical which are not need by the body)

Method of cooking:

1. Slice the tomatoe and set aside. In a heated pan put 1 tbsp of coconut virgin oil , half fry the tomatoe until lightly brown, then put it to side. 

2. On same pan, put the organic spinach and cover the pan until leaves are blanch with its own steam. Next, add the bitten egg on the spinach. Stir constantly until egg is cook. 

3. Now your omelette is ready to serve with your tomatoe sidings. Enjoy.
